I just added two gold gouramis to my tank. The female is hiding behind the filter, and the male is hiding behind the heater. Why would they be doing this? Should I be concerned?

Well your gold gouramis are probably scared. Imagine being taken from their home, in a car going up and down. Stopping and turning. Then put into a new tank.
Just wait 1-2 days and hey will be normal.
It could even take an hour. Depends on the fish and such.
I would only be concerned if they start showing signs of illness such as bloating and scale loss.
